Rooibos lemon syrup:

Fresh juice of 4 lemons (250 ml)
375 ml sugar
250 ml strong African Dawn rooibos tea

  • Rinse lemons.
  • Grate the peel of 1 lemon.
  • Squeeze the juice from all the lemons, and keep it separate.
  • Mix grated peel, sugar and rooibos tea.
  • Heat slowly over low heat.
  • Stir until all the sugar has dissolved.
  • Heat until boiling point.
  • Lower heat and let it simmer for 5 minutes.
  • Leave to cool.
  • Add squeezed lemon juice with peels mixture.
  • Pour in jug and keep in refrigerator.

To serve:

Mix 1 part lemon mixture with 2 parts chilled water or soda water.
