Rooibos lemon syrup:
Fresh juice of 4 lemons (250 ml)
375 ml sugar
250 ml strong African Dawn rooibos tea
- Rinse lemons.
- Grate the peel of 1 lemon.
- Squeeze the juice from all the lemons, and keep it separate.
- Mix grated peel, sugar and rooibos tea.
- Heat slowly over low heat.
- Stir until all the sugar has dissolved.
- Heat until boiling point.
- Lower heat and let it simmer for 5 minutes.
- Leave to cool.
- Add squeezed lemon juice with peels mixture.
- Pour in jug and keep in refrigerator.
To serve:
Mix 1 part lemon mixture with 2 parts chilled water or soda water. |
