Gerhard Hastings runs the machine on Groenkol farm in Clanwilliam South Africa. He controls the special amount of water the tes needs fermentation. Rooibos is a green colour when picked but after being piled in rows, wet and left to ferment, in only 12 hours the tea has turned a bright red colour. " The tea can be 45 degrees centigrade inside those rows come morning, even when it is cold overnight, the fermantation really makes heat". Explains farm owner/manager Willem Englbrecht.
